"You eat with your eyes first" — that's the line everything we make is built on. Looking at food we see texture, colour, shape, precision, consistency, and from there we decide if we want to eat it. If it looks good, it tastes good. Right?
Fig and Thyme was created with a mission to make food that catches the eye first, and tastes amazing second. Every box, every table, every canapé is built that way — by hand, the morning of, with the kind of care that a long time in beautiful restaurants teaches you.
Ten-plus years started at eighteen at The Beetle and Wedge in Moulsford, on the Thames — a riverside restaurant where every detail has to be right. The long hours of hospitality life aren't always compatible with family life, so eventually the path shifted.
Later, time at Le Manoir aux Quat'Saisons in Oxfordshire — by anyone's measure, the definition of beautiful both on and off the plate. Two years there, before life pulled in a new direction.
Fig and Thyme is what came next. A way to keep doing the work, the way we learned to do it — just shaped like a box, or a platter, or a table built in someone's wedding venue.
